Chicken and rice recipe


This recipe serves roughly 8 people. Remember to add all the calories from the ingredients you use. Certain ingredients may have more or less calories per serving.   


Ingredients (Roughly 6-8 servings)

2 boxes of chicken flavored rice
2-3 boneless skinless chicken breast (any style will work if you dont have or use breast)
Vegetables of your choice (I use two or three serving according to the bag)
Cheese (this is optional I sometimes leave it out)

On the stove bring a pot of water to a boil (I like to double what the rice needs because the water evaporates when boiling the chicken). Add your chicken and cook until done. When chicken is done remove and let cool. To the boiling water add your rice and let cook. You may want to add or remove some water depending on how thick you want your soup. Let the rice cook for the amount of time recommended on the back. I never add the butter. Once the rice is half way done add in your veggies. Well that is finishing up chop up your chicken into bit size pieces. If using bone chicken remember to remove all the skin and bone. When rice is finished remove from burner and add in your chicken and cheese. Let stand for a few minutes then serve. Cheese just thickens it up so if you dont want the cheese leave it out :) sometimes I leave it out and let everyone add what they want to this very easy basic dinner :)
